You can use any database, including your database but it has to be via REST. Check out http://restxpress.com. It's a product by Exadel that allows you to expose your relational data via REST APIs.

Thanks, I can create REST responses with coldfusion so shouldn't need an intermediary.

I just need to better understand the way that appery.io mobile app forms them.

You create a standard jQuery Mobile app in Appery.io. You send an Ajax request, there is no form submission.
