is there a similar syntax for Javascript to set the label and value of options in menu select?

Hi. Can someone kindly provide some additional details on the mapping mentioned above? For example, what the service call response would look like and how it gets mapped to the component. I am having trouble figuring out how to map the "Selected" attribute of each option. Thanks!!!!!!!!!
