"Import as Response" defined the response parameters but ALSO deleted my mapping and JS! Is there a way to preserve my mappings and JS or will I always need to go to every page in my project and re-map and re-write my code whenever I use the "Import as Response" feature?

You are right. If you change response parameters it will change response parameters in the mappings and therefore links will be deleted automatically.
Only way to get it back - do not save this project after this changes.
If you save it you can only restore it from backup or prev versions. If you did it before.
