I loaded my app onto my phone to give it a test, however it takes a minute to load then comes up with this error:

Application Error:

The connection to the server was unsuccessful. (file:///android_asset/www/startScreen.html)

Any ideas?

Also, I am a total noob at this, so please excuse me if I am a bit slow on things.

Did you install your app on device (using generated .apk file) or you've tested it in mobile browser?

Yes, I reproduced your problem, maybe there is some issue with service, but I was able to open your project from second attempt. Could you try again please. It should be already installed on your device. Just find that app and try to open

Tried about twenty times now. Only once did it open.

I had a similar message deploying the .apk to an andriod emulator. For me re-trying to open the app seems to work.

Yeah, I have been trying since I built it. Still not working. I followed all the instructions on the Mobile RSS and even re-did it just in case. Still not sure if I did something wrong.
