I am building an app. My customers will sign up and their credentials will be stored in the USER collection. However, each one of my customers will have a list of their customers that they wish to keep track of. They want to store their username and passwords. These END customers are not my customers so I dont want to store their details in the USER collection since they should not be able to log into my app.

Is there a way of creating my own collection called endCustomers and have their email and password information stored? How can I create an encrypted/hidden field in this table?

Sure, you can create any collection. It's up to you how to store encrypted information (should be implemented by you). You can use server code as proxy to encrypt/decrypt data.
