Any ideas on how to get the items in a collapsible set to stay 'opened' when another item in the set is selected? I've looked into the jquery mobile documentation on collapsible sets and it didn't provide any insight.

Unfortunatly this component also known as accordeon does not provide this option.

You can use grid item with separate "collapsible" inside it for this goal.
