How to handle images

Very new user, but am very surprised at how amazing appery.io is.
I have a couple new user questions:
What is the best way to design and size images across multiple sizes?
Should I work on an iPad format (and size images for that) knowing that most formats are down in size from that? I don't want pixelated images.
What is the new secret for centering images across formats, I've tried all css code and javascript on page load fixes I've found. I have not gotten any to work. I also tried 3 column grid with the image in the center. All efforts have resulted in an off center image???
