How to populate a select menu with its values and labels? And how to map them?

It seems my question was answered by another user, the answer was a link to your documentation, but that link was no good - it did not take you to the actual section....
Anyways, I need to know how to fill the label and values from a get request and map them because when i try to map both elements i can only find the "name" of the select menu, not its values and labels.....?? Thanks
