When I try to create a new app is there is a tab which says'custom templates',
how do i create a custom template from an existing app. The documentation for this appears to be either non-existent or hidden very deeply in your new 'improved' documentation.
You can click "Export", then "Appery.io plugin" and check "Add this plugin as project template".
Also you can create Page templates are described here

and custom components with "Save as custom component" link at the top of right-side panel with properties
